Feature Recipe  

Thai Fish Cakes

Congratulations to Patrick Gobetti for submitting this winning recipe. Patrick has won a Kenwood Hand Blender (HB660) worth at $104.95 RRP.

Kenwood Appliance Used: Kenwood Chef (A720)

Ingredients

3-4 fillets of fresh fish
3 cloves of garlic,
roughly chopped 1-2 cm piece of ginger,
peeled and roughly chopped 1 bunch of coriander
splash of fish sauce, to taste
1/2-1 teaspoon lemongrass, from jar
1/2-1 teaspoon chilli sauce
juice of 1/2 a lime
3 eggs
1/2 bunch of shallots

 

 

Thai Fish Cakes
(Serves 4)

Method

Using the Kenwood Chef mincer, place large whole screen mince and the fish into a bowl. Add the chopped garlic, ginger and coriander and mix together using the Kenwood Chef Mincer. Add the remaining ingredients, except shallots and combine well. Add finely chopped shallots and extra fish sauce to taste.

Form mixture into small balls and flatten. Place onto BBQ and seal both sides until brown and cooked through. Serve with chilli dipping sauce.

Chilli Dipping Sauce

Ingredients
1 tablespoon of brown sugar
2 tablespoons of water
2 table spoons of lime juice
1/4 cup chilli sauce
1 Lebanese cucumber, seeded and finely chopped or chopped
shallots

Method
Combine water, sugar, and lime juice and chilli sauce in a small
pan. Bring to the boil, then allow cooling. Stir in cucumber or shallots.
