- 750g lamb for mincing, fat removed
- 1/4
cup chives
- 2 cloves garlic
- 2 sprigs mint
- 2 teaspoons chilli
sauce
- 2 slices day old bread, crusts removed
- 1 small eggplant
sliced into 1 cm slices
- 2 capsicum, cut into 2cm slices
- 2 zucchini,
cut lengthwise in 5mm slices
- 1 red onion, sliced thickly
- Olive
oil
- Fruit chutney to serve
- 6 bread rolls, halves

Note: You will need your Kenwood Mincer
or mincer attachment for this recipe, also your Kenwood food processor.
Mince lamb, using medium screen. In the small bowl of
your Kenwood Food Processor, process chives, mint, garlic, chilli sauce and bread
until chopped. Place in clean bowl and add lamb, mixing well. Shape into 6 patties,
cover and refrigerate until needed. (They can be frozen for future use at this
point, or if using straight away, remove from fridge 20 minutes before cooking). Brush
vegetables with a little olive oil and barbecue or grill over medium heat for
about 2 minutes each side or until charred and tender. Remove and set aside. Barbecue
patties on a flat barbecue plate or in a frying pan for 6-7 minutes a side or
until cooked through. Place a slice of eggplant, a little zucchini and capsicum
on the base of the bread rolls, top with a patty, slice of onion and some chutney.
Replace roll tops and serve immediately. |
