- 1 lemon
- 1 orange
- 175g brown sugar
- 3 eggs, beaten
- 100g butter, cut into pieces

Note: For this recipe you will need to use the Citrus Juicer attachment.
Finely grate the zest from the lemon and orange and place in a medium-sized heatproof bowl. Halve the lemon and orange then extract the juice using the Citrus Juicer attachment. Add juice to the bowl, then stir in the brown sugar, eggs and butter.
Place the bowl over a pan of barely simmering hot water and stir for 15-20 minutes until the curd is hot and thickened.
Pour curd into sterilised, warm jars and seal. Leave to cool then store in refrigerator Makes a tasty filling for sponge cakes, or serve on fresh bread. |
