Feature Recipe  
Cinnamon, Banana and Date slice

Ingredients

  • 175g butter, chopped, at room temperature
  • 175g soft brown sugar
  • 3 eggs, lightly beaten
  • 1 ½ cups self raising flour 1 tspn.
  • Ground cinnamon
  • 2 large ripe bananas, peeled and mashed
  • 125g dried dates, sliced

 

 

Cinnamon, Banana and Date Slice
(serves 8-10)

Method

Preheat oven to 160 degrees C. Grease 1 litre loaf pan and line with baking paper.

Place butter and sugar in the bowl of your Kenwood Chef and cream on low speed until light and fluffy. Beat in eggs, flour and cinnamon until smooth.

Remove bowl and gently fold in bananas and dates. Spoon mixture into the pan and bake for 1 ½ - 1 ¾ hours or until cake has risen and a skewer inserted in the centre comes out clean.

Remove from oven and turn out on wire cake rack to cool.
