Feature Recipe  
Cinnamon, Banana and Date slice

Ingredients

  • 1 tablespoon lemon grass, white part only
  • 2 green onions
  • 500g boneless white fish fillets
  • 2 teaspoons Kikkoman Naturally Brewed Soy Sauce
  • 2 teaspoons fish sauce
  • 1 egg yolk
  • 1 tablespoon cornflour
  • 3 tablespoons vegetable oil

 

 

Lemon Grass Fish Cakes
(serves 4)

Method

Using the small bowl of your Kenwood Food Processor and the chopping blade, process the lemongrass and green onions until fine. Set aside.

In the large bowl of your Food Processor, process the fish fillets. Replace the chopping blade with the mixing blade, and add the lemon grass, onions, soy sauce, fish sauce, egg yolk and cornflour. Process lightly until just combined.

Using wet hands, shape mixture into small flat cakes and refrigerate for 30 minutes.

Heat half the oil in a large non-stick frypan over medium heat and cook fish cakes in batches, for about 3 minutes each side or until golden. Add remaining oil as necessary.

Serve with sweet chilli sauce.
