Feature Recipe  

Ingredients

  • 500g ripe rock melon, peeled and cut into chunks
  • 2 tablespoons gelatine
  • ¼ cup hot water
  • 2 eggs, separated
  • 2 cups milk
  • ½ cup sugar
  • ¼ cup orange juice
  • 2 teaspoons vanilla

 

 

Rock Melon Ice Cream
(You will need your food processor for this recipe)

Method

In your Kenwood food processor blend rock melon until smooth. Place hot water in a small saucepan, sprinkle gelatine on top and stir until dissolved and smooth. Beat egg yolks well and add milk, ¾ of the sugar, orange juice and vanilla. Add to rock melon mixture together with the dissolved gelatine. Process for 1 minute. Remove bowl and set aside.

With the whisk attachment of your food processor, beat egg whites until stiff. Gradually add remaining sugar and whisk until blended. Remove egg whites and fold into rock melon mixture.

Place mixture into ice cream container, cover and freeze until firm.
