Feature Recipe  

Ingredients

  • 500g Creative Gourmet Mixed Berries
  • 1/4 cup sugar (if required)
  • 80ml. crème de cassis (optional) chilled
  • sparkling shiraz, or rose champagne

 

 

Mixed Berry Soup
(serves 6-8)

This is a delightfully refreshing summer soup to serve as a dessert. Rose champagne can be substituted for Sparkling Shiraz if required.

Method

Defrost berries and place in your Kenwood blender. Process until smooth. Push small amounts of the berry mix through a fine sieve to remove seeds. Add sugar if required, and the cassis.

Cover and refrigerate until ready to serve. At the last minute, stir in enough chilled sparkling shiraz or champagne until the mixture becomes the consistency of thin cream. Serve immediately in cocktail glasses or small dessert bowls.
