Feature Recipe  

Ingredients

  • 375g potatoes, peeled and sliced
  • 500g leeks, white part only, sliced
  • 1 1/2 Litres of chicken Stock
  • Salt to taste
  • 150ml cream
  • 3 tablespoons of chopped chives, for garnish

 

 

Vichyssoise (Iced Leek & Potato Soup)
(serves 6-8)

Method

Simmer the vegetables in stock until soft.  Allow to cool.  Puree the soup in your Kenwood Blender until smooth.

Place the mixture into a bowl and stir in the cream. Season to your desired taste with salt and pepper.

Cover and chill in refrigerator until ready to serve.

Serve in chilled soup bowls and garnish with chopped chives.
