Blender Cheesecake (for a 9” pan)

 

 

Ingredients

  • 1 envelope gelatin
  • 1 tablespoon lemon juice
  • Yellow peel only of 1 lemon
  • 1/2cup hot milk
  • 1/4 cup sugar
  • 2 egg yolks
  • 250g cream cheese
  • 1 cup sour cream

Crumb Crust:

  • 8 sweet plain biscuits
  • 1/2 tablespoon sugar
  • 1/4 teaspoon cinnamon
  • 1/8 cup melted butter
 

 
 

Method

Break biscuits into quarters and place in your Kenwood Blender or the blender attachment of your Kenwood Chef. Using the Pulse button of your Kenwood Blender, blend into crumbs. Continue until all the biscuits are crumbed.

Stir in sugar and cinnamon. Add the melted butter and mix until all crumbs are moist.

Press crumbs against the sides and bottom of a buttered pan or 9” pie plate. Chill before adding the filling.

Filling:

Place gelatin, lemon juice, peel and hot milk in an electric blender. Coer and lend on high speed for 40 seconds. Add the sugar, egg yolks and cheese. Cover and blend 10 seconds. Add cream, and blend another 15 seconds. Pour filling into pan lined with pie crust. Chill until set.
