Feature Recipe  

Indian Style Rice with Peas (Mattar Pilau) (serves 4)

Ingredients

  • 1 tbs vegetable oil 
  • 4 cloves (whole) 
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1/2 tsp of chilli powder (optional) 
  • 1 1/2 cups of basmati rice
    (or other long-grain)
  • 1 1/2 cups of frozen peas
  • 2 tsp of salt
  • 2 1/2 cups of chicken stock (or water)

Method

Heat the oil in your Kenwood frying pan over a medium heat. When hot, fry the spices for 1 minute. Add the turmeric and rice then fry until all of the rice is covered with oil (around 2 minutes). Add the peas, stock and salt bring to boil cover with lid and then turn to heat to low. Leave without lifting lid for 25 minutes.
