Each month, all recipes will be tested by our judges in the Kenwood Test Kitchen and one recipe will be chosen to feature on the Kenwood Australia website and in the next KClub email.

The recipes will be judged on the taste, appearance, and the overall simplicity of the recipe.

This month’s theme is “Valentine’s Day Desserts". The February 2006 winner of the best recipe, will receive a Kenwood Chef (KM300) and an Icecream Maker Attachment (956) worth $518.00 RRP. Good Luck!

Summer Fruit Cake

Ingredients:

  • 125g Butter
  • 3/4 cup of Sugar (plus 1 tablespoon aditional)
  • 2 Eggs
  • 1 tablespoon of Lemon Juice
  • Zest of one Lemon
  • 1 cup of SR Flour
  • Summer Fruits - Peaches, Apricots, Pears or Nectarines
  • 1/2 Teaspoon of Cinnamon

Method:

  • Pre heat oven to 180C. Grease and line a 22cm cake tin.
  • Beat butter and sugar with your Kenwood for 2 minutes or until it is light in colour and fluffy
  • Beat in eggs, one at a time
  • Beat in lemon juice and zest
  • Add the SR flour, beating until smooth. Pour into the prepared pan.
  • Prepare the fruit you wish to use, halving, removing stones or cores and slicing. Arrange the fruit over the cake batter.
  • Combine the additional sugar and cinnamon and sprinkle over the cake.
  • Cook for about 40 - 45 minutes or until a skewer inserted into the middle of the cake, comes out clean.

This is a wonderful cake for a dessert or a special afternoon tea. It’s great served with cream or icecream or just enjoyed by itself!

The fruit I have on hand determines the fruit I use! It is especially wonderful using a combination of fruits - Apricot and Peach is a family favourite and Pear and Apple is also great. In winter this cake can be made using apple or canned apricots/peaches instead.
