Thai Fish Cakes With Sweet and Hot Dip

Ingredients:

 

For the fishcakes:

  • 300g fish fillets (cod, haddock or salmon chopped roughly)
  • 100g frozen prawns, thawed
  • 1 tablespoon red curry paste (see cooks notes)
  • 2 kaffir lime leaves, finely chopped (optional)
  • a small bunch of fresh coriander
  • 1 teaspoon salt
  • 100g green beans, chopped finely
  • 2 tablespoons peanuts
  • oil for frying

For the dipping sauce:

  • 2 small cucumbers, quartered lengthways
  • 1 small red or green chilli, de-seeded and sliced finely
  • 1 and 1/2 teaspoons sugar
  • 3 tablespoons rice or white wine vinegar
  • 1 tablespoon roasted peanuts
  • fresh coriander leaves, to garnish

Method:

  1. Put the fish, prawns, curry paste, lime leaves, corriander and salt in your food processor and process them with the knife blade to a fine paste, then add the beans and pulse to mix in. Turn out of the processor and place in a bowl. Refrigerate the mixture for up to 1 hour.
  2. Meanwhile make the dipping sauce. Slice the cucumber in the food processor and put into a bowl with the chilli. Combine the sugar, vinegar and 1 tablespoon of water in a saucepan and heat until the sugar has dissolved. Cool and pour over the cucumber. Spoon into little dipping bowls. Clean the bowl and then chop the peanuts roughly. Sprinkle on top with the coriander leaves.
  3. With greased hands, shape tablespoons of the fish mixture into small patties. Heat the oil in a frying pan and fry the cakes for 10 minutes on each side until golden and cooked through. Lift out with a fish slice and drain on kitchen paper. Serve the fishcakes with the dipping sauce.

Cook's Notes:

You can make your own red curry paste in the multi-mill, mini-processor bowl or liquidiser. Simply blend the following ingredients together until smooth: 2 large red chillies (de-seeded), 1 stalk lemongrass (peeled) , 2.5cm piece fresh ginger root (peeled), a large handful of fresh coriander, the juice and zest of 1 lime (preferably a kaffir), 4 garlic cloves, 4 schallots, 1 tablespoon of fish sauce and 1 each of salt and sugar. The paste will keep in the fridge for up to one week.

Preparation Time: 10 minutes + chilling time

Serves: 4

Cooking Time: 20 minutes

Freezing: Not Recommended
