Feature Recipe

Courgette, Cheddar and Dijon Tart

Ingredients:

• 1 quantity shortcrust pastry
• 275g courgettes, tops removed
• 2 tablespoons olive oil
• 2 garlic cloves crushed and peeled
• 2 eggs
• 1 egg yolk
• 300ml double cream or creme fraiche
• 1-2 tablespoons Dijon mustard
• 175g Cheddar cheese
• salt and pepper

Method:

1. Roll out the pastry to fit a 23cm round flat tin and bake blind

2. Slice the courgettes in the bowl. Heat the oil in a large frying pan and fry the garlic for one minute, then add the courgettes and stir-fry over a high heat for 4 minutes
3. Preheat the oven to 180 degrees Celsius. Grate the cheese using a shredding disc and put in a large bowl. Add the eggs, egg yolk, cream, mustard and the seasoning and beat together
4. Put the courgettes into the tart case and then pour in half the egg mixture. Place the tart on a baking tray, place on the oven shelf and pour in the remaining egg mixture. Bake for 30-40 minutes until the filling is set but not too firm.

Serves: 8

Cooking Time: cooking pastry case + 45 minutes

Freezing: Not Recommended
