Feature Recipe

Chicken satays with peanut satay sauce

Tender strips of chicken breast marinated in garlic, ginger and soy, then grilled and served with a peanut, coconut and lime sauce.

Ingredients:

• 4 chicken breasts sliced into long strips
• 20 wooden skewers soaked in water

For the marinade:

• 2 cloves garlic, peeled
• 2.5cm (1-inch) piece of fresh root ginger, peeled
• 2 tablespoons light soy sauce
• 1 tablespoon honey

For the satay sauce:

• 200 g (7 oz) roasted peanuts or 4 tablespoons crunchy peanut butter
• half a teaspoon chilli powder
• juice of one lime
• 100ml (3 and a half fl oz) coconut milk
• salt to taste

Method:

1. Fit the knife blade in the bowl and add the marinade ingredients, and blend until smooth. Place the chicken in a bowl and pour over the marinade. Leave for at least 30 minutes in the fridge
2. Preheat the grill to high. Thread the chicken onto the skewers and grill for 3 minutes on each side or until golden brown and cooked through.
3. Put all the sauce ingredients into the bowl (there is no need to wash it from the marinade) and blend until smooth. Check the seasoning and add more salt or lime juice if necessary. Put in a bowl and serve with the grilled chicken.

Cooks Note:

Satays are ideal for cooking on a barbecue.

Variations:

Try using prawns or pork fillet instead of the chicken.

Preparation Time: 30 min chilling time + 15 min

Serves: 4

Cooking Time: 10 minutes

Freezing: Not Recommended
