Feature Recipe

Apple and Cinnamon Scones

Ingredients:

• 225g eating apples, peeled, cored and quartered
• 225g self-raising flour
• 1 teaspoon baking powder
• 2 teaspoons ground cinnamon
• 50g butter, cut into pieces
• 50g caster sugar
• 1 egg beaten
• 2 tablespoons golden granulated sugar

Method:

1. Preheat the oven to 220 degrees celsius
2. Grate the apple coursly and put into a bowl
3. Process the flour with the baking powder, cinnamon, butter and the grated apple until the mixture comes together in a soft dough.

5. Turn the dough out onto a floured work surface and with floury hands press it out until it is2.5cm thick. Use a floured 5cm round cutter and cut out the scones.Place them on a piece of baking paper on a baking tray and dust with flour.
6. Brush the tops with beaten egg and sprinkle with sugar.
7. Bake for 8 - 10 minutes until light golden and well risen. Transfer at once onto a wire cooling rack till cool. Serve with butter and cream or jam.

Cooks Note:

The secret to soft and airy scones is to handle the dough very lightly and for a minimum of time.

Preparation Time: 10 min

Serves: Makes approx 20 scones

Cooking Time: 8 - 10 minutes

Freezing: Not Recommended
