Pork, Fennel and
Paprika Sausages

Ingredients:

  • 450g boneless, skinless belly of pork, cut into long thin strips
  • 2.5ml (1/2 teaspoons) black peppercorns, coarsely crushed, not ground
  • 2.5ml (1/2 teaspoons) fennel seeds
  • 10ml (2 teaspoons) salt
  • freshly ground black pepper
  • 15ml (1 tablespoon) paprika
  • 1 egg
  • 25g fresh breadcrumbs
  • length of sausage casing, standard or small, depending on size of sausage required

Method:

  1. Fit the coarse screen to the Grinder and mince the pork into the Kenwood Bowl. When all the pork has been minced, feed a little mince back through the Grinder to push through any remaining strips of meat left inside
  2. Add the crushed peppercorns, fennel seeds, salt, pepper, paprika, egg and breadcrumbs to the Kenwood Bowl. Using the K Beater, mix together at a minimum speed
  3. Replace the screen and cutting blade with the sausage filler. Dampen the end of the nozzle and slip on the sausage casing. Feed the sausage filling into the Grinder and through the filler. Once all the filling has been used, twist the casing to make individual sausages.
  4. To cook the sausages, heat a little oil in a frying pan over a gentle heat. Fry slowly for 15 - 20 minutes, or 10 minutes for cocktail sausages, turning occasionally, until golden.

Preparation Time: 20 min

Makes: 8 standard or 32 cocktail sausages

Cooking Time: 15 - 20 minutes

Freezing: Can be frozen if required
