Feature Recipe

Spinach and Ricotta Quiche

Ingredients:

Quiche:

  • 150g ricotta cheese
  • Salt
  • 150g baby spinach, steamed
  • 2 eggs
  • 1/2 cup cream
  • 1/4 cup grated parmesan

Pastry:

  • 125g plain flour
  • 60g butter, chilled, cubed
  • Pinch salt
  • 1 egg yolk
  • 1 tbs chopped fresh continental parsley

Method:

Feature Recipe

  1. To make the pastry, process the flour, butter and salt until fine crumbs form. Add the egg yolk, fresh parsley and 2 tbs water and process until it comes together. Knead until smooth. Cover with plastic wrap and refrigerate for 20 minutes.
  2. Roll the pastry out on a lightly floured surface and use it to line a 23cm (9 inch) round pie plate pressing into the edges of the plate as you go. Trim the edge.
  3. Preheat oven to 190°C.
  4. Line the pastry with non-stick baking paper and fill with rice or baking beans. Place on the tray and bake for 15 minutes. Remove paper and rice.
  5. Line pastry with the steamed spinach. Whisk eggs, ricotta and cream together. Pour over the filling. Sprinkle over the parmesan. Bake until just set.

Preparation Time: 30 min

Cooking Time: 30minutes

Serves: 4

Freezing: Not recommended
