Feature Recipe

Almond Roulade

Ingredients:

  • 25g flaked almonds, toasted
  • 115g whole blanched almonds
  • 150g caster sugar
  • 5 eggs, separated
  • 40g plain flour
  • 25ml (1/4 tsp) almond essence
  • 150ml double cream
  • 150g Greek yogurt
  • 2 nectarme or 6 ripe apricots, sliced
  • caster sugar, for sprinklrng

 

Method:

Feature Recipe: Almond Roulade

  1. Line a 33 x 23cm Swiss roll tin with non-stick baking parchment and sprinkle with flaked almonds. Preheat the oven to 180°C/350°F/Gas 4. Using the Food Processing Attachment fitted with the knife blade, or the Roto Food Cutter fitted with the fine shredding drum, very finely chop or grate the blanched almonds.
  2. Place 125g caster sugar and egg yolks in the Kenwood Bowl, and using the Whisk beat together until thick and creamy. Remove the bowl from the machine and fold in the grated almonds, flour and almond essence.
  3. Using a clean Kenwood Bowl and Whisk, whip the egg whites with the remaining sugar, until they are stiff and form peaks Carefully fold into the almond mixture, making sure not to knock the air out of the mixture.
  4. Pour into the prepared tin and spread out evenly. Bake for 15-18 minutes, until well risen and firm to the touch. Remove from the oven and leave in the tin, Cover with non-stick baking parchment and a damp tea towel, until cold.
  5. Invert on to a sheet of non-stick baking parchment, sprinkle another sheet with caster sugar and flip the roulade on to it. Using the Whisk, whip the cream until it just holds it's shape. Fold in the Greek yogurt and spread over the roulade.
  6. Sprinkle over the fruits, chopping the nectarine slices first, if large. Carefully roll up the roulade, using the paper to help. Dust with caster sugar and transfer to a serving plate.

Preparation Time: 20 min, plus cooling

Cooking Time: 15-18 minutes

Serves: 4-6

Freezing: Not recommended
